No Pasta Cauliflower Mac N Cheese

Cauliflower Mac N Cheese2 I’ve seen lots of recipes lately for cauliflower mac n cheese. I was skeptical—how could a mac n cheese without pasta be good?? Well I loved this. I have to say though you can’t expect it to taste just like pasta, but it is still delicious. The mustard in the cheese sauce really made it for me.
Ingredients:
  • 1 head cauliflower
  • 4 tbsp cream cheese
  • 1 tbsp. mustard (any kind)
  • 1 and 1/2 c. cheese (1/2 c. reserved for top)
  • Splash of cream
  • garlic powder
  • salt and pepper to taste
Chop the heads off the cauliflower and steam until soft. Once soft drain and return to saucepan. Add cream cheese, cheese and cream and stir until incorporated. Add mustard, garlic powder, and salt pepper to taste. Be careful, it is delicious!
Add mixture to a baking dish, cover with remaining 1/2 c. cheese and top with pepper and then broil until bubbly. Even my husband who loathes cauliflower loved this! (I mean obviously you can barely taste the cauliflower with all the cheese ;)

    1. Hi Nancy! The mustard really adds to the depth of the flavor of the cheese! (Think cheese fondue ;) But if you prefer it out feel free to omit!

  4. So, the recipes calls for mustard (any kind). My advice...do not use ground mustard. Blah! It tasted horrible and I was skeptical of the mustard in the first place. I would make it again though because I think it will be divine without the mustard!

    1. Hi there, so sorry about that! I should have clarified any type of condiment mustard, not ground mustard. I think yellow or dijon work great to add depth to the flavor and really it's my favorite part, but I still think it'd be great without mustard if you're averse to it! Thanks for the feedback!

    3. I prefer using a pinch of dry mustard over regular mustard.

  5. Hi Allison! I used colby jack here but any cheese would probably work - cheddar, swiss, monterey jack, etc.

  12. Beautiful blog! I can't believe that I've just stumbled across it now . This recipe was perfect for the head of cauliflower that was going to go bad in my refrigerator and the small bit of broccoli that I added in went perfect in it. My husband loved it and so did I! Thank you so much!

  13. Rant:- Don't call it what it "ISN'T" call it what it IS!! CAULIFLOWER CHEESE" Yummy! You don't even have to chop up the cauliflower, it can be left whole or cut into chunks then pour over the sauce! Still yummy!

    1. You really can't taste it once it's all mixed in, but I understand I'm not a huge cream cheese lover myself! You could easily buy alfredo sauce and mix some of that in, or if you'd like to use less dairy you could make a cashew cream sauce. Let me know if you find a good sub!

  18. Made this tonight. I used the light laughing cow Swiss as previous comment. I also used fat free cheddar .....LOVED IT but will not use mustard next time, to over powering and I even used 1/4 of amount (and I like mustard)

    1. I made this last night and it was delish!! I toped it off with some Havarti Slices I had and put it under the broiler to get that beautiful golden cheese crust. It is so good.

  21. I just made this. Delicious. I also added some cayenne pepper for a kick. All I had was rice cauliflower and that is what I used. Mustard does give it a great flavor. Next time instead of using yellow mustard I would like to try it with honey Dijon mustard. Yummm

  22. In the UK this is a dish called 'Cauliflower Cheese'. It us usually made with a bachamel sauce but I have made it with cream as a low carb alternative. It is nice with bacon in. Looks like nice tasty recipe.

  27. My granddaughters requested Mac'n'cheese the other day. I did use pasta shells, thought I'd see if I like the sauce and make it with cauliflower for hubby and myself later. Got two thumbs up from the girls. Made it again tonight to take to a pot luck tomorrow. Using pasta again...bow ties in honour of Doctor Who season premiere! Originally, I had to use a splash of cream three or four times, so this time used a whole cup of 10% cream...it's what I had. Used half cheddar cheese and half Monterey Jack and liked someone's idea above of using Laughing Cow for the cream cheese. I also added 1/2 cup mayonnaise, no mustard. OMG...fantastic!!! Now can't wait to finally do it with cauliflower!
