Lately I’ve been on an egg kick… After a good workout or even just after picking up my kids all day I’m really in the mood for some protein. I’ve been making them fried, scrambled, and my favorite egg salads. I like my egg salads with a little mayo, mustard, salt and pepper. Just simple and easy.
Ingredients:
- 8 hard boiled eggs
- 3 tbsp. mayo
- 1 tbsp. mustard (dijon or yellow)
- Salt and pepper to taste
I love eating it plain or on some thick wheat bread with lettuce and tomato. Enjoy!
