I’ve seen this salad floating around the internet and had the ingredients on hand the other day to try it out for lunch. It is delicious and light but with the sesame soy dressing it has a full flavor that makes it satisfying. Next time you have some cucumbers and avocadoes on hand, try this out!

Ingredients:
- 2 cucumbers (diced)
- 2 avocado (diced)
- 1 tablespoon sesame seeds (toasted) (I purchase these pre-toasted in a container near the spices)
- 1 tablespoon olive oil
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
