Whip up Something New

My friend Elise recently set up a blog challenge called Whip up Something New for those of us who have lists, links, books, and stacks of recipes we want to try but haven’t had the time or energy to do so.

The challenge is to create a new recipe each month and blog about it. Mine for January was Ina Garten’s Coconut Cupcakes. I’d heard so many heavenly things about this recipe over the years I was almost scared to make it… for fear that I would eat all of them in one sitting. Luckily at showers I can bring them all (or most of them) to give away and just keep a couple for sampling.

IMGP2308IMGP2309IMGP2311And note that in the reviews some people omitted almond extract—I think that would be a mistake. It really makes the flavor rich. I actually added extra so it would taste like marzipan.

  1. Those look gorgeous, Shan! Were they delicious?! I'm curious. There's a really yummy coconut cake recipe that I need to get from my mother-in-law... but it's almost over the top with all of the coconut flavor! Very strong for sure. Coconut is definitely one of my favorite flavors (I love coconut muffins) and I may have to try this out! They look so yummy!

  2. Hi there! I'm Elise's cousin in Dallas (technically Jason's cousin). You're quite crafty but I couldn't help staring down your caramels and then these cupcakes.

    A few weeks ago I baked Ina's coconut cake (also blogged about it) and these recipes are really similar. I wasn't sure about the almond extract but agree it added a lot! I'm hosting this month's edition of the challenge (born out of a post I wrote about my uncooked recipe stash); if you try anything new in Feb you're welcome to post a link!
